How to Order

You can choose FULL WAGYU or AMERICAN WAGYU.

What is the difference?

  • Full Wagyu is 100% Akauishi Wagyu, with the intense marbling and buttery flavour you would expect.

  • American Wagyu is 50% or 75% Wagyu, and 50% or 25% Angus, known as American Wagyu. It still has amazing marbling but has the depth of Angus.

How do I order my Akaushi Wagyu Beef share?

Reserve your beef share( 1/4, 1/2 or whole) with a deposit, paid online. Deposits usually open 1-2 months before harvest.

Once the Akaushi Wagyu Beef share has been dry aged for maximum flavor, vacuumed wrapped and frozen, we will contact you with the final invoice for payment and delivery options.

Because we are hands-on, a member of West County Farms, will personally deliver your frozen beef share within 100 mile radius of Weimar, TX. If you are outside of this radius, you will need to come and pick up your order or we can make accommodating arrangements.

A Quarter

  • 1/4 Akaushi Wagyu Beef Share typical portions, *you can expect close to the amounts below as these are typically what renders from our carcasses’ meat

    • 10-15 steaks in combination of a Ribeye, Filet Mignon, New York Strip

    • 2-4 Roasts combination

    • 4-5 Sirloin Steaks

    • 2-3 lbs in combination of Flank Steak, Skirt Steak, Fajita meat

    • 2-3 Ossu Buco

    • 2-3 lbs of stew meat

    • 45-50 1lb packages of hamburger meat

    • Small Brisket *not guaranteed

A Side

  • 1/2 Akaushi Wagyu Beef Share typical portions, *you can expect close to the amounts below as these are typically what renders from our carcasses’ meat

    • 20-25 steaks in combination of a Ribeye, Filet Mignon, New York Strip

    • 4-5 Roasts combination

    • 4-8 Sirloin Steaks

    • 4-6 lbs in combination of Flank Steak, Skirt Steak, Fajita meat

    • 4-6 Ossu Buco

    • 4-6 lbs of stew meat

    • 75-100 1lb packages of hamburger meat

    • Small Brisket *not guaranteed

A Whole

  • Whole Akaushi Wagyu Beef Share typical portions, *you can expect close to the amounts below as these are typically what renders from our carcasses’ meat

    • 40-45 steaks in combination of a Ribeye, Filet Mignon, New York Strip

    • 8-10 Roasts combination

    • 10-16 Sirloin Steaks

    • 10-15 lbs in combination of Flank Steak, Skirt Steak, Fajita meat

    • 10-14 Ossu Buco

    • 8-12 lbs of stew meat

    • 150-180 1lb packages of hamburger meat

    • 2 Briskets

    • 20lbs Short Ribssiness. Maybe you want to turn a hobby into something more.

How much freezer space will I need?

  • For 1/4 beef share, a small chest freezer would fit your needs (roughly 5 cubic feet).

  • For 1/2 beef share, you’ll need a bit more freezer space, but typically 10 cubic feet.

  • For a whole beef share, you guessed it, at least 20 cubic feet.

Where does the carcass get processed and packaged?

We work with a few different local processors, to help meet our schedules, but rest assured, these processing facilities are licensed by the USDA.
